Cost Controller
at Ambre Resorts & Spa in Belle Mare
Responsibilities:
- Double check that all outlets bills have duly signed and posted.
- Compare F&B costs with budgeted cost, identify & seek explanation for major variances.
- Ensure that all goods received are as per purchase order and have been appropriately captured on stock system by the storekeeper.
- Perform spot checks at different outlets & stores.
- Perform daily physical cash count on bar and other outlet and highlight any shortages/discrepancies to the FC.
- To verify all requisitions & issues made to outlets according to occupancy and highlight any inaccuracies.
- Calculate costing and pricing for all new menu and other bars & restaurants items.
- Advice Executive chef on the need to reduce excessive food costs.
- Any other cognate duties.
